2 medium apples, peeled, cored, and diced (Granny Smith or Honeycrisp)

1 cup all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 cup granulated sugar

1 large egg

1/2 cup milk

1 teaspoon vanilla extract

Oil for frying (vegetable or canola)

For the Glaze:

1 cup powdered sugar

2 tablespoons milk

1/2 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

Prepare the Apples: In a small bowl, toss the diced apples with 1 tablespoon of granulated sugar and a pinch of cinnamon. Set aside to let them release some juices.

    Make the Batter: In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, salt, and remaining granulated sugar until well combined. In another bowl, whisk the egg, then add milk and vanilla extract, mixing until smooth.

      Combine Dry and Wet Ingredients: Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Be careful not to overmix.
