Ingredients

1 cup all-purpose flour

1 tablespoon baking powder

½ teaspoon salt

¼ teaspoon black pepper

¼ cup unsalted butter, chilled and cubed

1 cup shredded sharp cheddar cheese

½ cup cooked bacon, crumbled

¾ cup milk

1 tablespoon fresh chives, chopped (optional)

Instructions

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

In a large mixing bowl, whisk together the flour, baking powder, salt, and black pepper until well combined.

Add the chilled butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until it resembles coarse crumbs.

Stir in the shredded cheddar cheese and crumbled bacon until evenly distributed.

Pour in the milk and mix until just combined. Be careful not to overmix; the dough should be slightly sticky.

Turn the dough onto a floured surface and gently knead it 2-3 times until it holds together.

Pat the dough into a 1-inch thick rectangle. Cut out biscuits using a round cutter or a glass, reforming scraps as necessary to cut out more biscuits.

Place the cut biscuits onto the prepared baking sheet, leaving about 1 inch of space between them.

(Optional) Brush the tops of the biscuits with extra milk and sprinkle with chopped chives for added flavor and color.

Bake in the preheated oven for 12-15 minutes, or until the tops are golden brown.

Remove from the oven and let them cool for a few minutes before serving warm.
