Ingredients

8 oz cream cheese, softened

1 cup shredded cheddar cheese

1 cup shredded pepper jack cheese

1/2 cup cooked bacon, crumbled

2-3 jalapeños, finely chopped (seeds removed for less heat)

1/2 cup Panko breadcrumbs

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika

1/4 tsp black pepper

1 cup flour (for coating)

2 eggs, beaten (for coating)

Vegetable oil (for frying)

Instructions

Prepare the Mixture: In a large mixing bowl, combine softened cream cheese, shredded cheddar cheese, shredded pepper jack cheese, crumbled bacon, chopped jalapeños, garlic powder, onion powder, smoked paprika, and black pepper. Mix until well combined.

Chill the Mixture: Cover the bowl with plastic wrap and refrigerate for about 30 minutes to firm up the mixture, making it easier to shape.

Form the Balls: Once chilled, scoop out about 1.5 tablespoons of the cheese mixture and roll it into a ball. Repeat until all the mixture is used up. You should get about 12-16 cheese balls.

Prepare for Breading: Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with Panko breadcrumbs.

Bread the Cheese Balls: Roll each cheese ball in flour, shaking off any excess, then dip into the beaten eggs, and finally coat with Panko breadcrumbs. Ensure each ball is well coated.

Heat the Oil: In a deep skillet or large pot, heat about 2 inches of vegetable oil over medium heat until it reaches 350°F (175°C).

Fry the Cheese Balls: Carefully drop 3-4 cheese balls into the hot oil, avoiding overcrowding. Fry for about 3-4 minutes, or until they are golden brown and crispy. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.

Serve: Enjoy the Bacon Jalapeño Popper Cheese Balls hot, served with your favorite dipping sauce, such as ranch or spicy sriracha mayo.
