1 lb boneless, skinless chicken thighs

1 cup buttermilk

1 cup all-purpose flour

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

1/2 tsp cayenne pepper (adjust to taste)

Salt and pepper, to taste

Oil, for frying

8 slider buns

1 cup shredded lettuce

1/2 cup sliced pickled jalapeños

1/2 cup mayonnaise

2 tbsp sweet chili sauce

1 tbsp Sriracha (optional)

Fresh cilantro, for garnish

Instructions
 

Marinate the Chicken: In a large bowl, combine the buttermilk, salt, and pepper. Add the chicken thighs, ensuring they’re fully submerged. Cover and refrigerate for at least 1 hour (or overnight for best results).

    Prepare the Coating: In another bowl, mix together the flour, garlic powder, onion powder, paprika, cayenne pepper, and a pinch of salt and pepper.

      Fry the Chicken: Heat oil in a deep skillet or fryer over medium-high heat (about 350°F/175°C). Remove the chicken from the buttermilk and dredge each piece in the seasoned flour mix. Shake off the excess and carefully lower into the hot oil. Fry until golden brown and cooked through (about 5-7 minutes). Drain on paper towels.

        Make the Bang Bang Sauce: In a small bowl, mix together the mayonnaise, sweet chili sauce, and Sriracha (if using) until smooth.

          Assemble the Sliders: Slice the slider buns in half. Spread a generous amount of Bang Bang sauce on the bottom half of each bun. Add a piece of fried chicken, followed by a layer of shredded lettuce and pickled jalapeños. Top with the bun lid.

            Serve: Garnish with fresh cilantro and serve with extra Bang Bang sauce on the side for dipping.
