1 lb (450g) beef sirloin, thinly sliced against the grain

3 tablespoons black bean sauce

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil

1 bell pepper, sliced (red or green)

1 large onion, sliced

3 cloves garlic, minced

1-inch piece ginger, grated

1 teaspoon sesame oil

2 green onions, chopped (for garnish)

Cooked jasmine rice (to serve)

Instructions
 

Marinate the Beef: In a bowl, combine the beef slices, black bean sauce, soy sauce, oyster sauce, and cornstarch. Mix well to ensure the beef is coated. Let it marinate for at least 30 minutes to allow the flavors to penetrate.

    Heat the Oil: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat until shimmering.

      Stir-fry the Vegetables: Add the sliced onion and bell pepper to the skillet. Stir-fry for about 3-4 minutes until they begin to soften. Add the minced garlic and grated ginger, cooking for an additional minute until fragrant.

        Cook the Beef: Push the vegetables to one side of the skillet. Add the marinated beef to the other side in a single layer. Let it sear for 2-3 minutes without stirring to achieve a nice browning. Stir everything together and cook for another 3-4 minutes until the beef is cooked through.

          Add Flavor: Drizzle the sesame oil over the mixture, stirring well to combine all ingredients. Taste and adjust seasoning if necessary.

            Garnish and Serve: Remove from heat, then garnish with chopped green onions. Serve hot over a bed of cooked jasmine rice.
