1 lb ground beef

2 cups fresh spinach, chopped

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1 egg

1 tsp garlic powder

1/2 tsp onion powder

Salt and pepper to taste

1 package (9 oz) fresh tortellini (cheese or meat-filled)

2 cups marinara sauce

2 tbsp olive oil

Fresh basil leaves for garnish (optional)

Instructions
 

Prepare the Filling: In a large bowl, combine the ground beef, chopped spinach, ricotta cheese, grated Parmesan, egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.

    Make the Tortellini: On a clean surface, lay out the tortellini dough (if using homemade, roll out thinly). Place a teaspoon of the beef filling in the center of each circle of dough. Fold the dough over to form a half-moon shape and pinch the edges to seal tightly. Bring the two corners of the half-moon together and pinch to form the tortellini shape. Repeat until all filling is used.

      Cook the Tortellini: Bring a large pot of salted water to a boil. Carefully add the tortellini and cook according to package instructions (usually 3-5 minutes for fresh tortellini) until they float to the surface and are cooked through. Drain well.

        Prepare the Sauce: While the tortellini is cooking, heat olive oil in a skillet over medium heat. Pour in the marinara sauce and let it simmer for about 5 minutes, stirring occasionally.

          Combine and Serve: Gently add the drained tortellini to the skillet with the marinara sauce. Toss carefully to coat each piece with the sauce. Cook for an additional 2-3 minutes to allow the flavors to meld.

            Garnish and Enjoy: Serve hot, garnished with fresh basil leaves and an extra sprinkle of Parmesan cheese if desired.
