Beef Tenderloin with Mushroom Sauce

Ingredients
  

2 lbs beef tenderloin, trimmed

Salt and freshly ground black pepper, to taste

2 tablespoons olive oil

4 tablespoons unsalted butter, divided

1 medium onion, finely chopped

2 cloves garlic, minced

8 oz cremini mushrooms, sliced

1 cup beef broth

1 cup heavy cream

1 tablespoon Dijon mustard

1 teaspoon fresh thyme leaves, chopped

Fresh parsley, chopped, for garnish

Instructions
 

Prepare the Beef: Preheat your oven to 400°F (200°C). Season the beef tenderloin generously with salt and pepper all over.

    Sear the Tenderloin: In a large, oven-safe skillet, heat olive oil over medium-high heat. Once hot, add the tenderloin and sear for 4-5 minutes on each side, until a golden-brown crust forms.

      Roast the Beef: Transfer the skillet to the preheated oven and roast for about 20-25 minutes for medium-rare, or until it reaches your desired doneness. Use a meat thermometer for accuracy (125°F for medium-rare). Once done, remove from oven and let it rest for 10 minutes.

        Make the Mushroom Sauce: In the same skillet, reduce heat to medium and add 2 tablespoons of butter. Sauté onions until translucent, about 3-4 minutes. Stir in garlic and cook for another minute.

          Cook the Mushrooms: Add the sliced mushrooms to the skillet, cooking until they are browned and have softened, about 5-7 minutes.

            Create the Sauce Base: Pour in the beef broth, scraping any browned bits from the bottom of the skillet. Let it simmer for 5 minutes until slightly reduced.

              Finish the Sauce: Stir in the heavy cream, Dijon mustard, and thyme. Allow the sauce to simmer for an additional 5 minutes until it thickens slightly. Stir in the remaining 2 tablespoons of butter for added richness. Season with salt and pepper to taste.

                Serve: Slice the rested beef tenderloin into medallions and place on a serving platter. Drizzle the mushroom sauce generously over the slices. Garnish with chopped parsley.
