1 cup graham cracker crumbs

2 tablespoons sugar

1/4 cup unsalted butter, melted

16 oz cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 tablespoon culinary lavender

1/4 cup sour cream

1 cup fresh blackberries (plus extra for topping)

2 tablespoons lemon juice

1 teaspoon gelatin powder

2 tablespoons water

Instructions
 

Prepare the Crust:

    - Preheat the oven to 325°F (160°C).

      - In a medium mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.

        - Press the mixture firmly into the bottom of a springform pan, creating an even layer. Bake for 10 minutes, then remove and let cool.

          Make the Cheesecake Filling:

            - In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

              - Gradually add powdered sugar, continuing to beat until combined.

                - Mix in vanilla extract and sour cream until fully incorporated.

                  - In a small saucepan over low heat, combine the culinary lavender with 1/4 cup of water. Simmer for about 5 minutes to infuse the flavor. Strain out the lavender flowers and add the infused water to the cream cheese mixture.

                    - Gently fold in fresh blackberries and lemon juice.

                      Prepare the Gelatin (Optional for a firmer texture):

                        - In a small bowl, sprinkle gelatin over 2 tablespoons of water and let it sit for about 5 minutes to bloom.

                          - Heat gently until dissolved, then whisk it into the cheesecake filling.

                            Assemble the Cheesecakes:

                              - Pour the cheesecake filling over the cooled crust in the springform pan and smooth the top.

                                - Place in the refrigerator for at least 4 hours or overnight to set.

                                  Serve:

                                    - Once set, carefully remove from the springform pan.

                                      - Top with additional fresh blackberries and a sprinkle of lavender, if desired.
