2 ½ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

¾ cup unsalted butter, softened

1 cup granulated sugar

½ cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

1 teaspoon lemon zest

For the Blueberry Filling:

1 cup fresh blueberries (or frozen, thawed)

¼ cup granulated sugar

1 tablespoon cornstarch

1 tablespoon lemon juice

½ teaspoon cinnamon (optional)

For the Glaze (optional):

1 cup powdered sugar

2-3 tablespoons milk

½ teaspoon vanilla extract

Instructions
 

Prepare the Blueberry Filling:

    - In a saucepan over medium heat, combine the blueberries, granulated sugar, cornstarch, lemon juice, and cinnamon (if using). Cook for about 5-7 minutes until the blueberries break down slightly and the mixture thickens. Remove from heat and let cool.

      Make the Cookie Dough:

        - In a mixing bowl, whisk together the flour, baking soda, and salt. Set aside.

          - In another bowl, beat the softened butter, granulated sugar, and brown sugar until creamy.

            - Add the egg, vanilla extract, and lemon zest, mixing until well combined.

              - Gradually add the dry ingredients to the wet ingredients, mixing until you have a smooth dough.

                Preheat the Oven:

                  - Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

                    Assemble the Cookies:

                      - Take a tablespoon of dough and flatten it slightly in your palm. Add about a teaspoon of the cooled blueberry filling in the center.

                        - Gently fold the edges of the dough over the filling, pinching to seal it well, and reshape it into a cookie. Repeat with the remaining dough and filling.
