For the Brownie Base:

1 cup semi-sweet chocolate chips

1/2 cup unsalted butter

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/3 cup all-purpose flour

1/4 teaspoon salt

For the Peanut Butter Filling:

1/2 cup creamy peanut butter

1/4 cup unsalted butter, softened

1/2 cup powdered sugar

1/2 teaspoon vanilla extract

For the Chocolate Coating:

1 cup milk chocolate chips

1 teaspoon vegetable oil (optional, for thinning)

Instructions
 

Prepare the Brownie Base:

    - Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners or grease the pans well with cooking spray.

      - In a medium saucepan, melt the semi-sweet chocolate chips and butter together over low heat, stirring continually until smooth. Remove from heat and let it cool slightly.

        - In a mixing bowl, combine the cooled chocolate mixture with granulated sugar, eggs, and vanilla extract. Mix well until combined.

          - Gently fold in the flour and salt until just combined. Do not over-mix.

            - Pour a tablespoon of brownie batter into each muffin cup, filling them about halfway. Bake for 10-12 minutes, or until a toothpick comes out with a few moist crumbs. Allow them to cool completely in the pan before transferring to a wire rack.

              Make the Peanut Butter Filling:

                - In a mixing bowl, beat together creamy peanut butter and softened butter until smooth.

                  - Gradually add powdered sugar and vanilla extract, mixing until fully combined and creamy.

                    - Once the brownies have cooled, scoop out a small amount from the center of each brownie bite to create a small indent.

                      - Fill each indent with about 1 teaspoon of peanut butter filling and gently smooth over the top.

                        Prepare the Chocolate Coating:

                          - In a microwave-safe bowl, combine the milk chocolate chips and vegetable oil (if using). Heat in the microwave in 20-30 second bursts, stirring after each interval until melted and smooth.

                            Assembly:

                              - Dip each filled brownie bite into the melted chocolate, allowing excess chocolate to drip off.

                                - Place them back on the wire rack or parchment paper to set. If desired, you can drizzle some extra melted chocolate on top for decoration.

                                  Serve and Enjoy:
