For the Cookie Dough:

1 cup unsalted butter, softened

3/4 cup granulated sugar

3/4 cup brown sugar, packed

1 large egg

2 teaspoons vanilla extract

2 1/4 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon salt

1 cup semi-sweet chocolate chips

For the Cheesecake Filling:

8 oz cream cheese, softened

1/4 cup granulated sugar

1 teaspoon vanilla extract

1 egg yolk

Instructions
 

Prepare the Cheesecake Filling:

    - In a medium mixing bowl, combine the softened cream cheese, 1/4 cup granulated sugar, 1 teaspoon vanilla extract, and the egg yolk.

      - Beat with an electric mixer until smooth and creamy.

        - Set the filling aside in the refrigerator to firm up while you prepare the cookie dough.

          Make the Cookie Dough:

            - Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

              - In a large mixing bowl, cream together the softened butter, 3/4 cup granulated sugar, and 3/4 cup brown sugar using an electric mixer until light and fluffy.

                - Add in the egg and 2 teaspoons of vanilla extract, mixing until well combined.

                  - In a separate bowl, whisk together the flour, baking soda, and salt.

                    - Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

                      - Fold in the chocolate chips.

                        Assemble the Cookies:

                          - Take about 2 tablespoons of cookie dough and flatten it slightly in your palm.

                            - Place about 1 tablespoon of the cheesecake filling in the center and fold the dough around it to form a ball.

                              - Repeat this process for the remaining dough and filling, placing the stuffed cookies onto the prepared baking sheets, leaving ample space in between each cookie.

                                Bake the Cookies:

                                  - Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown and the centers are still slightly soft.

                                    - Remove from the oven and allow the cookies to cool on the baking sheets for about 5 minutes before transferring them to wire racks to cool completely.

                                      Serve:
