Ingredients
  

2 large onions

1 cup all-purpose flour

1 teaspoon paprika

1 teaspoon garlic powder

1/2 teaspoon cayenne pepper

1/2 teaspoon salt

1/2 teaspoon black pepper

2 large eggs

1 cup buttermilk

1 1/2 cups breadcrumbs

1 cup shredded cheddar cheese

8 slices of cooked bacon, crumbled

Vegetable oil (for frying)

Fresh parsley (for garnish, optional)

Instructions
 

Prepare the Onions:

    - Peel the onions and slice them into thick rings (about 1/2 inch thick). Carefully separate the rings, keeping larger outer rings intact.

      Make the Cheese and Bacon Filling:

        - In a medium bowl, combine the shredded cheddar cheese and crumbled bacon. Set aside.

          Prepare the Breading Station:

            - In a shallow dish, mix together the flour, paprika, garlic powder, cayenne pepper, salt, and black pepper.

              - In another bowl, whisk together the eggs and buttermilk until well combined.

                - Place the breadcrumbs in a third bowl.

                  Fill the Onion Rings:

                    - Take an outer onion ring and stuff a spoonful of the cheesy bacon mixture into it. Remove any excessive filling from the edges to ensure easy coating.

                      - Repeat this step with all the onion rings.

                        Bread the Onion Rings:

                          - Dredge each stuffed onion ring in the flour mixture, making sure to coat it evenly. Shake off any excess flour.

                            - Dip the floured onion ring into the egg mixture, allowing any excess to drip off.

                              - Finally, coat the ring in breadcrumbs, pressing gently to adhere.

                                Fry the Onion Rings:
