2 cups cooked rice (white or brown)

1 pound boneless, skinless chicken breasts, diced

1 cup salsa (mild, medium, or hot depending on preference)

1 cup shredded cheddar cheese

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

2 tablespoons olive oil

Chopped fresh cilantro for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken to the skillet. Season with garlic powder, onion powder, cumin, chili powder, salt, and pepper. Cook for about 5-7 minutes until chicken is fully cooked and no longer pink. Remove from heat.

      Combine Ingredients: In a large mixing bowl, combine the cooked rice, salsa, black beans, corn, and the cooked chicken. Mix well until all ingredients are evenly distributed.

        Prepare for Baking: Transfer the mixture into a greased 9x13-inch baking dish. Spread it out evenly.

          Add Cheese: Sprinkle the shredded cheddar cheese on top of the mixture, ensuring it's evenly covered.
