Ingredients
  

2 cups unsweetened applesauce

1 cup cherry-flavored gelatin (such as Jell-O)

2 cups boiling water

1 cup cold water

1 cup cherries (fresh or canned, pitted and chopped)

1/2 cup chopped walnuts (optional for crunch)

1 tablespoon lemon juice

Whipped cream for serving (optional)

Instructions
 

In a large mixing bowl, dissolve the cherry-flavored gelatin in 2 cups of boiling water, stirring until completely dissolved.

    Add the cold water and mix well. Set aside to cool slightly.

      In a separate bowl, combine the unsweetened applesauce and lemon juice. Mix until well blended.

        Slowly stir the applesauce mixture into the gelatin mixture until fully incorporated.

          Fold in the chopped cherries and walnuts (if using) gently to avoid breaking the fruit.

            Pour the mixture into a decorative mold or serving dish.

              Cover and refrigerate for at least 4 hours or until fully set.

                Once set, gently unmold the jello salad onto a serving platter or serve directly from the dish.

                  Slice into squares or scoop out servings and top with whipped cream if desired.
