Ingredients

4 large russet potatoes

2 cups shredded cheddar cheese

1 cup cooked chili (homemade or canned)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

½ cup sour cream

¼ cup sliced green onions (for garnish)

¼ cup pickled jalapeños (optional, for garnish)

Instructions

Prepare the Potatoes: Preheat your oven to 425°F (220°C). Wash and peel the russet potatoes, then cut them into uniform fries. Place them in a bowl and drizzle with olive oil. Sprinkle with garlic powder, paprika, salt, and black pepper to coat evenly.

Bake the Fries: Spread the seasoned fries onto a baking sheet in a single layer. Bake in the preheated oven for 25-30 minutes, flipping halfway through, until they are golden brown and crisp.

Heat the Chili: While the fries are baking, warm up the chili in a small saucepan over medium heat. Stir occasionally until heated through.

Assemble the Dish: Once the fries are baked, remove them from the oven and transfer to an oven-safe serving dish. Pour the heated chili over the fries, then sprinkle the shredded cheddar cheese generously on top.

Melt the Cheese: Return the loaded fries to the oven for 5-7 minutes, or until the cheese is completely melted and bubbly.

Garnish and Serve: Remove from the oven and drizzle with sour cream. Add sliced green onions and jalapeños if desired. Serve hot and enjoy your cheesy chili fries!
