Ingredients

For the Chipotle Salmon:

4 salmon fillets (6 ounces each)

2 tablespoons olive oil

2 tablespoons chipotle chili powder

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon brown sugar

Salt and pepper, to taste

1 lime, juiced

For the Mango Avocado Salsa:

1 ripe mango, diced

1 ripe avocado, diced

1 small red onion, finely chopped

1 jalapeño, minced (optional for heat)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt, to taste

Instructions

Marinate the Salmon:

    - In a small bowl, combine olive oil, chipotle chili powder, smoked paprika, garlic powder, brown sugar, lime juice, salt, and pepper. Mix well to form a marinade.

      - Place the salmon fillets in a shallow dish and coat them with the marinade. Cover and refrigerate for 30 minutes to 1 hour to allow the flavors to develop.

        Prepare the Mango Avocado Salsa:

          - In a mixing bowl, combine diced mango, avocado, red onion, jalapeño, and cilantro.

            - Drizzle with lime juice and sprinkle with salt. Gently toss to combine, being careful not to mash the avocado. Set aside.

              Cook the Salmon:

                - Preheat your grill or skillet over medium-high heat. If grilling, oil the grates to prevent sticking.

                  - Remove the salmon from the marinade and shake off excess. Cook the fillets skin-side down for about 5-6 minutes, then carefully flip and cook for an additional 3-4 minutes or until the salmon is cooked through and flakes easily with a fork.

                    Serve:

                      - Plate the grilled salmon and generously top with the mango avocado salsa.

                        - Garnish with extra cilantro and lime wedges, if desired. Serve hot with your choice of side, like rice or quinoa.
