Ingredients

1 cup creamy peanut butter

1 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup semi-sweet chocolate chips

Optional: Coarse sea salt for topping

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a mini muffin tin, or line it with mini cupcake liners.

Mix Peanut Butter Mixture: In a mixing bowl, combine the creamy peanut butter and granulated sugar. Mix until smooth and well combined.

Add Wet Ingredients: Add the egg, vanilla extract, baking soda, and salt to the peanut butter mixture. Stir until everything is fully incorporated and you have a smooth dough.

Shape the Dough: Use a tablespoon to scoop the dough and roll it into balls. Place a ball in each muffin cup, filling the cups about 2/3 full.

Bake the Cups: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let cool for about 5 minutes.

Add Chocolate: While the cookie cups are still warm, gently press a few chocolate chips into the center of each cookie. The heat will melt the chips, creating a deliciously gooey center.

Cool Completely: Allow the cookie cups to cool in the muffin tin for another 10-15 minutes before transferring them to a wire rack to cool completely.

Optional Topping: If desired, sprinkle a pinch of coarse sea salt on top of each cookie cup for an extra flavor burst.
