Ingredients
  

1 cup all-purpose flour

1/2 cup water

1/4 cup unsalted butter

1 tablespoon granulated sugar

1/2 teaspoon salt

1 teaspoon vanilla extract

2 large eggs

1 cup granulated sugar (for coating)

2 teaspoons ground cinnamon

Oil for frying (vegetable or canola)

Instructions
 

In a medium saucepan, combine the water, butter, granulated sugar, and salt. Heat over medium heat until the butter melts, then bring the mixture to a gentle boil.

    Remove the saucepan from the heat and quickly stir in the flour, mixing until a dough forms. Let it cool slightly for about 5 minutes.

      Add the eggs one at a time, mixing well after each addition until fully combined. Stir in the vanilla extract.

        Transfer the dough to a piping bag fitted with a large star tip or a zip-top bag with the tip cut off.

          In a deep skillet or pot, heat oil to 350°F (175°C) for frying.

            Pipe small bite-sized pieces of dough (about 1-2 inches long) directly into the hot oil, cutting the dough with scissors as you go. Fry the churro bites in batches, ensuring not to overcrowd the pan, for about 2-3 minutes or until golden brown all over.

              Remove the churro bites from the oil using a slotted spoon and let them drain on a paper towel-lined plate.

                In a shallow bowl, combine the granulated sugar and ground cinnamon. While the churro bites are still warm, toss them in the cinnamon sugar mixture until evenly coated.

                  Serve warm, with chocolate sauce or caramel for dipping if desired.
