1 lb beef sirloin, thinly sliced

2 tablespoons olive oil

1 medium onion, finely chopped

2 garlic cloves, minced

8 oz cremini mushrooms, sliced

2 tablespoons all-purpose flour

1 cup beef broth

1 teaspoon Worcestershire sauce

1 teaspoon Dijon mustard

1 cup sour cream

3 cups egg noodles

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Egg Noodles: In a large pot of salted boiling water, cook the egg noodles according to package instructions until al dente. Drain and set aside.

    Sear the Beef: In a large skillet over medium-high heat, heat the olive oil. Season the sliced beef with salt and pepper. Add the beef to the skillet and sauté for about 3-4 minutes until browned but not fully cooked. Remove the beef from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the chopped onion and garlic. Cook for about 2-3 minutes until the onion becomes translucent. Add the sliced mushrooms and continue cooking for another 5 minutes until they are tender.

        Make the Sauce: Sprinkle the flour over the onion and mushroom mixture, stirring well to combine. Slowly pour in the beef broth while stirring to avoid lumps. Add Worcestershire sauce and Dijon mustard. Bring the mixture to a gentle simmer and allow it to thicken, about 5 minutes.

          Finish the Stroganoff: Reduce the heat to low and stir in the sour cream until fully incorporated. Return the seared beef (along with any juices) to the skillet and cook for an additional 2-3 minutes until heated through. Adjust seasoning with salt and pepper if needed.

            Combine and Serve: Toss the cooked egg noodles with the creamy beef mixture until well coated. Serve hot, garnished with fresh parsley.
