12 oz fettuccine or linguine pasta

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup cherry tomatoes, halved

1 cup fresh spinach, roughly chopped

Salt and pepper, to taste

Fresh basil leaves, for garnish

Lemon wedges, for serving

Instructions
 

Cook the Pasta: Fill a large pot with salted water and bring it to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté Shrimp: In a large skillet over medium heat, add the olive oil. Add the minced garlic and red pepper flakes, sautéing until fragrant (about 1 minute).

      Cook the Shrimp: Increase the heat to medium-high and add the shrimp to the skillet. Cook until they turn pink and opaque (about 3-4 minutes). Remove the shrimp from the skillet and set aside.

        Prepare the Sauce: In the same skillet, add the heavy cream and bring it to a gentle simmer. Stir in the grated Parmesan cheese until melted and smooth. If the sauce is too thick, use some of the reserved pasta water to reach desired consistency.

          Combine Ingredients: Add the halved cherry tomatoes and chopped spinach to the sauce, cooking until the spinach wilts. Season with salt and pepper to taste.

            Mix with Pasta: Add the drained pasta and the cooked shrimp to the sauce, tossing to combine everything well and ensuring the pasta is coated in the creamy sauce.

              Serve: Plate the pasta, garnish with fresh basil leaves and extra Parmesan if desired. Serve with lemon wedges on the side to brighten the dish.
