8 oz linguine

1 lb shrimp, peeled and deveined

2 tbsp olive oil

4 cloves garlic, minced

2 cups fresh spinach, chopped

1 cup cherry tomatoes, halved

1 cup heavy cream

½ cup grated Parmesan cheese

1 tsp Italian seasoning

Salt and pepper, to taste

Fresh basil leaves, for garnish

Zest of 1 lemon (optional)

Instructions
 

Cook the Linguine: In a large pot of salted boiling water, cook the linguine according to package instructions until al dente. Drain and set aside.

    Sauté the Shrimp: In a large skillet, heat olive oil over medium heat. Add the shrimp and season with salt, pepper, and Italian seasoning. Cook for about 2-3 minutes per side, or until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Next, add the cherry tomatoes and cook for 2-3 minutes until they begin to soften.

        Cream Addition: Pour in the heavy cream, stirring to combine. Let it simmer for about 2 minutes. Then, add the grated Parmesan cheese, stirring until the cheese melts and the sauce becomes creamy.

          Mix in Spinach: Add the chopped spinach to the sauce, stirring until it wilts down. Return the shrimp to the skillet and incorporate them into the sauce.

            Combine with Pasta: Finally, add the cooked linguine to the skillet and toss everything together to coat the pasta with the creamy sauce.
