1 lb fresh salmon fillet, skinless

1/2 cup all-purpose flour

1/2 cup cornstarch

1 tsp garlic powder

1/2 tsp salt

1/4 tsp black pepper

2 large eggs, beaten

1 cup panko breadcrumbs

1/4 cup honey

4 cloves garlic, minced

2 tbsp soy sauce

1 tbsp rice vinegar

1/2 tsp red pepper flakes (optional)

Fresh chopped parsley for garnish

Oil for frying

Instructions
 

Prepare the Salmon: Cut the salmon fillet into bite-sized cubes (about 1-inch pieces) and set aside.

    Set Up Breading Station: In a shallow bowl, mix together the flour, cornstarch, garlic powder, salt, and black pepper. In another shallow bowl, place the beaten eggs. In a third bowl, place the panko breadcrumbs.

      Bread the Bites: Dredge each salmon cube in the flour mixture, shaking off any excess. Next, dip it into the beaten eggs, allowing the excess to drip off, and finally coat it in panko breadcrumbs. Press gently to ensure the breadcrumbs stick. Repeat with all salmon pieces.

        Make the Honey Garlic Sauce: In a small saucepan, combine honey, minced garlic, soy sauce, rice vinegar, and red pepper flakes (if using). Cook over medium heat, stirring occasionally, until it simmers and thickens slightly, about 5 minutes. Remove from heat.

          Fry the Salmon Bites: In a large skillet, heat about 1/2-inch of oil over medium-high heat. Once hot, fry the salmon bites in batches, being careful not to overcrowd the pan. Cook for 2-3 minutes on each side until golden brown and crispy. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.

            Toss in Sauce: While the salmon bites are still hot, drizzle the honey garlic sauce over them or toss them gently in the sauce to coat.

              Serve & Garnish: Plate the crispy honey garlic salmon bites and garnish with fresh chopped parsley. Serve immediately with extra sauce on the side for dipping.
