Ingredients
  

1 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1/2 teaspoon baking soda

1/4 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

2 teaspoons vanilla extract

1 cup semi-sweet chocolate chips

1/2 cup mini marshmallows

Optional: 1/2 cup crushed graham crackers for texture

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt. Set aside.

      In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 3-4 minutes.

        Add the egg and vanilla extract to the butter and sugar mixture and beat until well combined.

          Gradually mix in the dry ingredients to the wet ingredients until just combined. Be careful not to overmix.

            Fold in the semi-sweet chocolate chips and mini marshmallows (and crushed graham crackers if using).

              Using a cookie scoop or tablespoon, drop cookie dough onto the prepared baking sheet, leaving space between each cookie as they will spread slightly.

                Bake in the preheated oven for 10-12 minutes, until the edges are set but the centers are still soft.

                  Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
