1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon dried oregano

1 teaspoon garlic powder

1 cup buttermilk

1/2 cup olive oil

2 large eggs

1 cup shredded mozzarella cheese

1 cup cooked and crumbled Italian sausage (or your choice of toppings)

1/2 cup diced bell peppers

1/2 cup marinara sauce

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C). Grease a standard cupcake pan or line with cupcake liners.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, oregano, and garlic powder until well combined.

      Combine Wet Ingredients: In another bowl, mix the buttermilk, olive oil, and eggs until smooth.

        Combine Mixtures: Gradually add the wet mixture to the dry ingredients, stirring until just combined. Be careful not to overmix.

          Add Fillings: Gently fold in the mozzarella cheese, sausage, and bell peppers.

            Fill Cupcakes: Spoon the batter into the prepared cupcake pan, filling each cup about two-thirds full. Make a small indentation in the center of each cupcake.

              Add Marinara Sauce: Place a teaspoon of marinara sauce into the indentation of each cupcake. Use a toothpick to swirl the sauce gently if desired.

                Bake: Bake in the preheated oven for 18-20 minutes or until golden brown and a toothpick inserted into the center comes out clean.

                  Cool and Garnish: Allow the cupcakes to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely. Garnish with fresh basil leaves before serving, if desired.
