Ingredients

6 large eggs

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon Dijon mustard

1 celery stalk, finely chopped

1/4 cup red onion, finely diced

1 tablespoon fresh dill, chopped

1 tablespoon fresh chives, chopped

Salt and pepper to taste

1 teaspoon smoked paprika

4 slices of whole-grain bread (optional for serving)

Lettuce leaves for serving (optional)

Instructions

Boil the Eggs: Place the eggs in a saucepan and cover them with cold water. Bring to a boil, then cover and remove from heat, letting them sit for 12 minutes.

Cool and Peel: After 12 minutes, transfer the eggs to a bowl of ice water to cool for 10 minutes. Once cool, peel the eggs and chop them coarsely.

Prepare the Dressing: In a large mixing bowl, combine the mayonnaise, Dijon mustard, smoked paprika, and a pinch of salt and pepper. Stir until smooth.

Mix in Veggies and Herbs: Add the chopped celery, red onion, dill, and chives to the dressing, mixing well to combine.

Combine with Eggs: Gently fold in the chopped eggs, being careful not to mash them too much; you want a chunky texture. Taste and adjust seasoning if necessary.

Serve: If using, lay lettuce leaves on bread slices for a refreshing crunch. Spoon the egg salad onto the lettuce or directly onto the bread and serve immediately.
