8 oz (about 2 cups) rotini pasta

1 cup dill pickles, chopped (plus some pickle juice)

1/2 cup red onion, finely diced

1/2 cup red bell pepper, diced

1/2 cup celery, diced

1 cup cherry tomatoes, halved

1 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

1 teaspoon dried dill weed

Salt and pepper to taste

Optional: fresh dill for garnish

Cook the Pasta: In a large pot, bring salted water to a boil. Add rotini pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Allow to cool.
