Ingredients
  

2 cups cooked shredded chicken (rotisserie chicken works well)

1 cup broccoli florets (fresh or frozen)

1 cup cauliflower florets (fresh or frozen)

1 cup cream cheese, softened

1 cup shredded cheddar cheese (plus extra for topping)

1/2 cup sour cream

1 tsp garlic powder

1 tsp onion powder

1/2 tsp salt

1/4 tsp black pepper

1/2 cup chicken broth

1/2 cup almond flour (optional for topping)

2 tbsp olive oil (optional for drizzling)

Instructions
 

Preheat oven to 350°F (175°C).

    In a large mixing bowl, combine the shredded chicken, broccoli, and cauliflower.

      In another bowl, mix together cream cheese, cheddar cheese, sour cream, garlic powder, onion powder, salt, pepper, and chicken broth until well blended.

        Fold the cheese mixture into the chicken and vegetable mix, ensuring everything is evenly coated.

          Transfer the mixture into a greased 9x13-inch baking dish.

            If using, sprinkle almond flour over the top of the casserole for a crispy layer. Otherwise, simply add more cheddar cheese on top.

              Drizzle olive oil on top for an extra flavor punch (optional).

                Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the cheese is golden brown.

                  Let cool for a few minutes before serving to allow the casserole to set.
