1 box (15.25 oz) red velvet cake mix

1/2 cup vegetable oil

3 large eggs

8 oz cream cheese, softened

1/2 cup granulated sugar

1/2 cup powdered sugar

1 tsp vanilla extract

1 tub (8 oz) whipped topping, thawed

Red and white sprinkles (for decoration)

Instructions
 

Prepare the Cake: Preheat your oven to 350°F (175°C). In a mixing bowl, combine the red velvet cake mix, vegetable oil, and eggs. Mix until well combined and smooth.

    Bake the Cake: Pour the cake batter into a greased 9x13-inch baking dish. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let it cool completely.

      Make the Cheesecake Filling: In another mixing bowl, beat the softened cream cheese until creamy. Add the granulated sugar, powdered sugar, and vanilla extract. Mix until fully combined. Gently fold in the whipped topping until smooth.

        Assemble the Bites: Once the cake has cooled, crumble it into a large bowl. Take a small portion of the crumbled cake and flatten it in your hand. Add a teaspoon of the cheesecake filling in the center, and then mold the cake around the filling to create a ball. Repeat until all the filling is used.

          Chill: Place the cheesecake bites on a lined baking sheet. Refrigerate for at least 30 minutes to firm up.

            Decorate: Once chilled, drizzle with melted chocolate if desired, and sprinkle with red and white sprinkles for a festive touch.
