Fried Cod Fish Sandwich

Ingredients
  

4 pieces of fresh cod fillets (about 6 oz each)

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup buttermilk

1/2 cup panko breadcrumbs

Vegetable oil (for frying)

4 fresh brioche buns

1 cup shredded lettuce

1 large tomato, sliced

Pickles (optional)

Tartar sauce or aioli (for serving)

Instructions
 

Prep the Cod: Rinse the cod fillets under cold water and pat them dry with paper towels. This helps the coating stick better during frying.

    Make the Breading: In a shallow bowl, combine flour, garlic powder, paprika, salt, and black pepper. In another bowl, pour the buttermilk. In a third bowl, add the panko breadcrumbs.

      Coat the Fish: Dip each piece of cod first into the flour mixture, shaking off any excess. Next, dip it into the buttermilk, allowing any excess to drip off, and finally coat it in the panko breadcrumbs, pressing gently to adhere.

        Heat the Oil: In a large skillet, pour about 1 inch of vegetable oil and heat it over medium-high heat until it reaches around 350°F (175°C). To test oil readiness, drop a small piece of bread in—if it sizzles and browns within a minute, it's ready.

          Fry the Cod: Carefully place the breaded cod into the hot oil, cooking in batches if necessary to avoid overcrowding. Fry for about 3-4 minutes on each side or until golden brown and crispy. Remove the cod and place it on a paper towel-lined plate to drain any excess oil.

            Prepare the Sandwich: Toast the brioche buns lightly on a grill or skillet. Spread a generous amount of tartar sauce or aioli on the bottom half of each bun.

              Assemble: Place a piece of fried cod on top of the sauce, followed by a handful of shredded lettuce, a slice of tomato, and pickles if desired. Top with the other half of the bun.

                Serve: Serve the sandwiches with your favorite sides, such as fries or coleslaw, and enjoy your homemade crispy cod delight!
