For the Chicken Gyros:

1 lb boneless, skinless chicken thighs

3 tablespoons olive oil

2 cloves garlic, minced

1 tablespoon dried oregano

1 tablespoon ground cumin

1 teaspoon smoked paprika

Juice of 1 lemon

Salt and pepper to taste

4 pita bread or flatbreads

Fresh vegetables for serving (sliced tomatoes, red onion, lettuce)

For the Cucumber Tzatziki:

1 cup Greek yogurt

1 medium cucumber, finely grated and excess moisture pressed out

1 clove garlic, minced

1 tablespoon olive oil

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon fresh lemon juice

Salt and pepper to taste

Instructions
 

Marinate the Chicken: In a large bowl, combine olive oil, minced garlic, oregano, cumin, smoked paprika, lemon juice, salt, and pepper. Add chicken thighs and coat well. Cover and refrigerate for at least 1 hour (or overnight for best flavor).

    Make the Tzatziki: In a mixing bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, dill, lemon juice, salt, and pepper. Mix well and refrigerate for at least 30 minutes to allow the flavors to meld.

      Cook the Chicken: Preheat a grill or a skillet over medium-high heat. Remove chicken from the marinade and cook for about 5-7 minutes on each side until fully cooked through and slightly charred. The internal temperature should reach 165°F (75°C).

        Slice the Chicken: Remove the chicken from the grill and let it rest for a few minutes. Slice the cooked chicken into thin strips.

          Assemble the Gyros: Warm the pita bread or flatbreads. Layer the sliced chicken on each piece, followed by fresh vegetables. Drizzle generously with cucumber tzatziki.
