Ingredients

1 pre-made pizza dough (store-bought or homemade)

1 cup fresh spinach, washed and dried

4 cloves roasted garlic, mashed

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/2 cup feta cheese, crumbled

1 tablespoon olive oil

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon lemon juice

Fresh parsley, for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 475°F (245°C) and place a pizza stone or baking sheet inside to heat up.

Prepare Spinach: In a skillet over medium heat, add olive oil and sauté the fresh spinach until wilted—about 2-3 minutes. Season with salt and black pepper. Remove from heat and let it cool slightly.

Make the Garlic Spread: In a bowl, combine the mashed roasted garlic, ricotta cheese, lemon juice, dried oregano, salt, and black pepper. Mix until well blended.

Roll Out Pizza Dough: On a lightly floured surface, roll out the pizza dough into your desired shape (circle or rectangle). Aim for about 1/4 inch thickness.

Assemble the Pizza: Carefully transfer the rolled-out dough onto a piece of parchment paper for easy transferring to the oven. Spread the garlic-ricotta mixture evenly over the dough, leaving a small border around the edges.

Add the Spinach and Cheese: Scatter the wilted spinach over the ricotta layer, followed by the shredded mozzarella and crumbled feta cheese.

Bake: Slide the pizza (with the parchment paper) onto the preheated pizza stone or baking sheet. Bake for about 12-15 minutes, or until the edges are golden brown and the cheese is bubbly.

Garnish and Serve: Once out of the oven, let the pizza cool for a minute. If desired, sprinkle fresh parsley on top for a touch of color. Slice and serve hot!
