4 medium green apples, cored and chopped

2 cups water

1 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon ground cinnamon

A pinch of salt

Instructions
 

In a medium saucepan, combine the chopped green apples and water. Bring to a boil over medium heat.

    Once boiling, reduce the heat and let it simmer for about 15 minutes, until the apples are soft.

      Remove the saucepan from heat and let it cool slightly. Then, use a fine-mesh strainer or cheesecloth to strain the mixture into another pot, discarding the apple pulp.

        Return the apple juice to the saucepan and add the sugar, lemon juice, ground cinnamon, and a pinch of salt. Stir well to combine.

          Place the saucepan over medium heat and cook, stirring occasionally, until the sugar has completely dissolved.

            Increase the heat and bring the mixture to a gentle boil. Let it boil for about 10-15 minutes, or until it thickens slightly to your desired consistency (keep in mind it will thicken further as it cools).

              Once ready, remove from heat and let it cool completely. Transfer the syrup into a sterilized glass jar or bottle.
