Ingredients
  

1 tablespoon olive oil

1 large onion, chopped

3 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 pound smoked ham, diced

1 teaspoon dried thyme

1 teaspoon smoked paprika

1 bay leaf

6 cups low-sodium chicken broth

2 cans (15 oz each) white beans (cannellini or navy), drained and rinsed

1 can (14.5 oz) diced tomatoes, undrained

Salt and pepper to taste

Fresh parsley, chopped for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.

    Stir in the minced garlic, diced carrots, and celery. Sauté for another 4-5 minutes until the vegetables start to soften.

      Add the diced ham, dried thyme, smoked paprika, and bay leaf to the pot. Mix well and cook for an additional 3 minutes to enhance the flavors.

        Pour in the chicken broth, stirring to combine. Add the rinsed white beans and the undrained diced tomatoes.

          Bring the soup to a boil, then reduce the heat and let it simmer uncovered for about 30 minutes, stirring occasionally.

            Season with salt and pepper to taste. Remove the bay leaf before serving.

              Ladle the soup into bowls and garnish with fresh chopped parsley.
