Ingredients

4 chicken thighs (bone-in, skin-on)

1/4 cup olive oil

1/4 cup fresh lime juice

4 cloves garlic, minced

1 tablespoon smoked paprika

1 tablespoon ground cumin

1 teaspoon cayenne pepper (adjust to taste)

1 teaspoon oregano

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Marinate the Chicken: In a large bowl, combine olive oil, lime juice, minced garlic, smoked paprika, cumin, cayenne pepper, oregano, salt, and black pepper. Whisk until well blended. Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 1 hour (or up to overnight for stronger flavors).

Preheat the Grill: Preheat your grill to medium-high heat. If you’re using charcoal, allow it to ash over before placing the chicken on.

Grill the Chicken: Remove the chicken from the marinade, letting excess marinade drip off. Place the chicken skin-side down on the grill. Grill for about 6-8 minutes or until the skin is crispy and has grill marks. Flip the chicken and grill for an additional 6-8 minutes, or until the internal temperature reaches 165°F (74°C).

Rest the Chicken: Once cooked, remove the chicken from the grill and let it rest for 5 minutes. This helps the juices redistribute for a tender bite.

Serve: Garnish with chopped cilantro and serve with lime wedges. This dish pairs beautifully with rice, grilled veggies, or a fresh salad.
