1 lb beef stew meat, cut into bite-sized pieces

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

3 carrots, sliced

2 celery stalks, chopped

1 cup green beans, trimmed and cut into pieces

2 medium potatoes, diced

1 can (14 oz) diced tomatoes with juice

6 cups beef broth

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper to taste

1 bay leaf

Fresh parsley, chopped (for garnish)

Brown the Meat: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef stew meat and season with salt and pepper. Sear the meat until browned on all sides, about 5-7 minutes. Remove the meat and set it aside.

    Sauté Vegetables: In the same pot, add the diced onion, carrots, and celery. Cook for about 5 minutes until they begin to soften. Add the minced garlic and cook for an additional minute, stirring frequently.

      Combine Ingredients: Return the browned beef to the pot. Add the green beans, diced potatoes, canned tomatoes, beef broth, dried thyme, dried oregano, and the bay leaf. Stir everything together until well combined.

        Simmer the Soup: Bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 1.5 to 2 hours. Stir occasionally until the beef is tender and the flavors meld together.
