Ingredients
  

1 pound boneless, skinless chicken thighs

3 tablespoons honey

3 tablespoons soy sauce (low sodium preferred)

2 cloves garlic, minced

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 teaspoon freshly grated ginger

1 tablespoon cornstarch

2 tablespoons water

Salt and pepper, to taste

1 tablespoon sesame seeds (for garnish)

2 green onions, chopped (for garnish)

Instructions
 

Marinate the Chicken: In a medium bowl, mix honey, soy sauce, minced garlic, sesame oil, rice vinegar, and grated ginger. Add the chicken thighs to the bowl and coat them well in the marinade. Cover and let marinate for at least 30 minutes in the refrigerator (or up to 2 hours for more flavor).

    Prepare the Sauce: In a small bowl, whisk together cornstarch and water to create a slurry. Set aside.

      Cook the Chicken: Heat a large skillet over medium-high heat. Remove the chicken from the marinade (reserve the marinade) and season lightly with salt and pepper. Add the chicken to the skillet and cook for about 5-7 minutes on each side, or until the chicken is cooked through and has a nice golden-brown color.

        Add the Marinade: Once the chicken is cooked, pour the reserved marinade into the skillet. Bring to a simmer and cook for about 2 minutes.

          Thicken the Sauce: Stir in the cornstarch slurry into the skillet. Allow the sauce to thicken for about 1-2 minutes while stirring constantly. Make sure the chicken is coated well in the thickened sauce.

            Garnish and Serve: Remove from heat and garnish with sesame seeds and chopped green onions. Serve the honey garlic chicken over rice or with steamed vegetables.
