8 oz cream cheese, softened

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1/4 cup diced jalapeños (fresh or pickled, adjusted to taste)

1/4 cup green onions, finely chopped

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp smoked paprika

1 cup panko breadcrumbs

2 large eggs

Vegetable oil (for frying)

Salt and pepper to taste

Instructions
 

Prepare the Cheese Mixture: In a mixing bowl, combine the softened cream cheese, cheddar cheese, mozzarella cheese, diced jalapeños, green onions, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until fully incorporated and smooth.

    Form the Balls: Use your hands to scoop and roll about 1 tablespoon of the cheese mixture into a ball. Repeat with the remaining mixture, placing the cheese balls on a baking sheet lined with parchment paper.

      Chill: Place the cheese balls in the freezer for 30 minutes to firm up. This will help them hold their shape during frying.

        Prepare for Frying: In a shallow bowl, beat the two eggs. In another bowl, place the panko breadcrumbs. Dip each chilled cheese ball first into the beaten eggs to coat, then roll in the panko breadcrumbs until fully covered. Place back on the baking sheet.

          Heat the Oil: In a large pot or deep fryer, heat about 2 inches of vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping in a small piece of bread; it should sizzle immediately.

            Fry the Cheese Balls: Working in batches, carefully add the cheese balls to the hot oil. Fry for about 3-4 minutes or until golden brown, turning occasionally. Be sure not to overcrowd the pot.

              Drain and Serve: Use a slotted spoon to remove the cheese balls and place them on a plate lined with paper towels to drain excess oil.
