Ingredients

1 lb (450 g) boneless, skinless chicken breasts

2 cups broccoli florets

2 tbsp olive oil

Salt and pepper, to taste

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 tsp Italian seasoning

1/2 tsp garlic powder

1/2 tsp onion powder

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Chicken: Season the chicken breasts with salt and pepper. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken and cook for 6-7 minutes on each side or until the chicken is cooked through and golden brown. Remove from the skillet and let it rest for a few minutes before slicing it into strips.

Cook the Broccoli: In the same skillet, add the remaining tablespoon of olive oil. Add the broccoli florets and sauté for 3-4 minutes until they are tender but still crisp. Remove from the skillet and set aside.

Make the Alfredo Sauce: In the same skillet, reduce the heat to medium-low and add the minced garlic. Sauté for about 30 seconds until fragrant. Pour in the heavy cream, and stir well. Bring it to a gentle simmer and then gradually whisk in the Parmesan cheese. Stir continuously until the cheese has melted and the sauce thickens, about 3-4 minutes.

Combine Everything: Add the cooked chicken and broccoli back into the skillet with the Alfredo sauce. Stir until everything is well coated. Season with Italian seasoning, garlic powder, and onion powder. Adjust salt and pepper to taste.

Serve: Garnish with freshly chopped parsley and additional Parmesan cheese if desired. Serve hot and enjoy your creamy Keto Chicken Alfredo with Broccoli!
