8 large jalapeños

2 cups leftover mac and cheese

1 cup shredded cheddar cheese

1/2 cup cream cheese, softened

1/4 cup breadcrumbs (Panko for extra crunch)

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika

Salt and pepper to taste

Fresh parsley or chives, for garnish (optional)

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare Jalapeños: Cut the jalapeños in half lengthwise and remove the seeds and membranes for a milder flavor. If you like it spicy, leave some seeds in.

      Create Filling: In a mixing bowl, combine the leftover mac and cheese, shredded cheddar cheese, cream cheese, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until all ingredients are well-blended and creamy.

        Stuff Jalapeños: Generously fill each jalapeño half with the mac and cheese mixture, pressing down slightly to pack it in.

          Add Topping: Sprinkle Panko breadcrumbs on top of the stuffed jalapeños for a crunchy finish.
