1 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

2 cups all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

Zest of 1 lemon

1/4 cup fresh lemon juice

For the Lemon Filling:

1 cup powdered sugar

2 large eggs

1/3 cup fresh lemon juice

2 teaspoons lemon zest

1 tablespoon all-purpose flour

A pinch of salt

For Garnish:

Powdered sugar, for dusting

Lemon slices or zest, for decoration

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a muffin tin (12-cup capacity).

    Make the Cookie Base: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add in the eggs and vanilla extract, mixing until well combined.

      Combine Dry Ingredients: In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, mixing gently until just combined. Stir in the lemon zest and lemon juice.
