For the Shortbread Base:

1 cup (225g) unsalted butter, softened

1/2 cup (100g) granulated sugar

2 cups (250g) all-purpose flour

1/4 teaspoon salt

For the Caramel Layer:

1 cup (200g) packed brown sugar

1/2 cup (120ml) heavy cream

1/2 cup (115g) unsalted butter

1 teaspoon vanilla extract

1/4 teaspoon salt

For the Chocolate Topping:

8 ounces (226g) dark chocolate, chopped

2 tablespoons (30g) unsalted butter

Instructions
 

Make the Shortbread Base:

    - Preheat your oven to 350°F (175°C) and line an 8x8 inch (20x20 cm) square baking pan with parchment paper, leaving some overhang for easy removal.

      - In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

        - Gradually add the flour and salt, mixing until just combined. The dough should hold together without being too sticky.

          - Press the dough evenly into the bottom of the prepared pan. Bake for 20-25 minutes, or until lightly golden around the edges. Let it cool completely in the pan.

            Prepare the Caramel Layer:

              - In a saucepan over medium heat, combine the brown sugar, heavy cream, butter, and salt. Stir constantly until the mixture is smooth and the sugar is dissolved.

                - Bring the mixture to a gentle boil and cook for 5-7 minutes without stirring, until it thickens slightly. Remove from heat and stir in the vanilla extract.

                  - Pour the caramel over the cooled shortbread base and let it set at room temperature for about 1 hour.

                    Make the Chocolate Topping:

                      - In a microwave-safe bowl, combine the chopped dark chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until melted and smooth.

                        - Pour the melted chocolate over the set caramel layer, spreading it evenly with a spatula.

                          Chill and Serve:

                            - Allow the chocolate to set at room temperature for about 30 minutes, then transfer the pan to the refrigerator for at least 1 hour to fully set.

                              - Once set, lift the Millionaire Shortbread out of the pan using the parchment overhang and cut into squares or bars.
