Ingredients
  

12 baby potatoes

1 cup shredded cheddar cheese

1/2 cup cooked bacon, crumbled

1/4 cup sour cream

2 green onions, chopped

1 tablespoon olive oil

Salt and pepper, to taste

Optional: chili flakes for a kick

Instructions
 

Preheat the oven to 400°F (200°C).

    Scrub the baby potatoes under running water to remove any dirt, then dry them with a towel.

      Pierce each potato several times with a fork to allow steam to escape during baking.

        Place the potatoes on a baking sheet, drizzle with olive oil, and sprinkle with salt and pepper. Toss to coat evenly.

          Bake in the preheated oven for about 20-25 minutes, or until the potatoes are tender when pierced with a fork.

            Once baked, remove the potatoes from the oven and let them cool for about 5 minutes.

              Slice each potato in half lengthwise. Carefully scoop out a small portion of the flesh from each half, leaving a thin layer to keep the skin intact.

                Place the hollowed potato halves back on the baking sheet. Fill each half with shredded cheddar cheese and crumbled bacon.

                  Return the filled potato skins to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

                    Remove the mini potato skins from the oven and let them cool slightly. Top each with a dollop of sour cream and a sprinkle of chopped green onions. Add chili flakes, if desired.
