Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a cupcake tin with paper liners.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt until well combined. Set aside.

Cream Together Butter and Sugars: In a large mixing bowl, beat the softened butter with both sugars until light and fluffy, about 3-4 minutes.

Add Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract until fully incorporated.

Combine Wet Ingredients: Alternately add the flour mixture and buttermilk to the butter mixture, starting and ending with the flour. Mix until just combined. Slowly stir in the boiling water until the batter is smooth.

Fill Cupcake Liners: Divide the batter evenly among the cupcake liners, filling each about 2/3 full.

Bake: Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean. Remove from the oven and allow to cool for 10 minutes in the tin before transferring to a wire rack to cool completely.

Prepare Coconut-Pecan Frosting: In a saucepan, combine evaporated milk, sugar, butter, egg yolks, and vanilla. Cook over medium heat, stirring constantly until thickened. Remove from heat, then stir in the shredded coconut and chopped pecans. Allow to cool slightly before frosting the cooled cupcakes.

Make the Chocolate Ganache: In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove from the heat and add the chocolate chips. Stir until smooth and completely melted. Allow to cool slightly before using.

Assemble the Cupcakes: Once the cupcakes are cool, generously top each one with the coconut-pecan frosting. Drizzle the chocolate ganache over the frosting for an extra touch of decadence.

Serve: Let the ganache set for a few minutes and serve your mouth-watering German chocolate cupcakes to family and friends!
