1 cup creamy peanut butter

1/2 cup coconut oil, melted

1/4 cup honey or maple syrup

1 cup gluten-free oats

1 cup almond flour (or any nut flour)

1/4 cup cocoa powder

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup dark chocolate chips (dairy-free if preferred)

Instructions
 

In a large mixing bowl, combine the creamy peanut butter, melted coconut oil, and honey (or maple syrup). Stir until smooth and well-blended.

    Add the gluten-free oats, almond flour, cocoa powder, vanilla extract, and salt to the mixture. Mix thoroughly until all the ingredients are combined and a thick dough forms.

      Line a baking dish (about 9x9 inches) with parchment paper, allowing some overhang for easy removal.

        Transfer the mixture to the prepared baking dish and press it down firmly into an even layer. Make sure it is packed tightly for the best texture.

          In a microwave-safe bowl, melt the dark chocolate chips in 30-second increments, stirring in between until fully melted and smooth.

            Pour the melted chocolate over the pressed peanut butter mixture, spreading it evenly with a spatula.

              Place the baking dish in the refrigerator for at least 1-2 hours, or until the bars are set and firm to the touch.

                Once set, use the parchment paper to gently lift the bars out of the dish. Cut into squares or rectangles as desired.

                  Store remaining bars in an airtight container in the refrigerator for up to a week.
