Ingredients
  

2 cups of puffed rice cereal

1 cup of rolled oats

1 cup of creamy peanut butter

1/2 cup of honey or maple syrup

1/4 cup of brown sugar

1 teaspoon of vanilla extract

1/2 teaspoon of salt

1/2 cup of mini chocolate chips (optional)

1/2 cup of chopped nuts or seeds (optional)

Instructions
 

Prepare the Pan: Line a 9x9 inch baking dish with parchment paper, leaving some overhang on the sides for easy removal.

    Mix Dry Ingredients: In a large mixing bowl, combine the puffed rice cereal and rolled oats. If using, add the chopped nuts or seeds to the mixture and stir to combine.

      Heat Wet Ingredients: In a medium saucepan over low heat, combine the peanut butter, honey (or maple syrup), brown sugar, salt, and vanilla extract. Stir continuously until the mix is well combined and heated through, about 3-5 minutes.

        Combine Mixtures: Pour the warm peanut butter mixture over the dry cereal and oats. Stir well until everything is evenly coated. If desired, fold in the mini chocolate chips at this point.

          Transfer to Pan: Pour the mixture into the prepared baking dish. Using a spatula or your hands (dampening them slightly can help), press the mixture firmly and evenly into the pan.

            Chill and Set: Place the baking dish in the refrigerator for about 1-2 hours, or until the bars are set and firm.

              Cut and Serve: Once set, lift the bars out of the pan using the parchment overhang. Cut into squares or rectangles. Enjoy!
