1 cup creamy peanut butter

1 cup granulated sugar

1 large egg

1 tsp vanilla extract

1/2 tsp baking soda

1/4 tsp salt

24 mini chocolate peanut butter cups (like Reese's)

1/2 cup chocolate chips (optional for drizzling)

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, combine the peanut butter, granulated sugar, egg, vanilla extract, baking soda, and salt. Mix well until the batter is smooth and creamy.

      Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

        Gently press a mini peanut butter cup into the center of each cookie dough ball, making sure it's partially submerged.

          Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked, but they will set as they cool.

            Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

              (Optional) If you want to add a chocolate drizzle, melt the chocolate chips in the microwave in 30-second intervals until smooth, then drizzle over the cooled cookies.
