Ingredients
  

1 lb flank steak, thinly sliced

2 tablespoons olive oil

Salt and pepper to taste

1 medium onion, thinly sliced

1 green bell pepper, sliced

1 cup provolone cheese, shredded (or cheese whiz for a classic touch)

4 large russet potatoes, cut into fries

1 tablespoon garlic powder

1 tablespoon paprika

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Fries:

    - Preheat your oven to 425°F (220°C).

      - Toss the cut potatoes with olive oil, garlic powder, paprika, salt, and pepper.

        - Spread them evenly on a baking sheet in a single layer and bake for 25-30 minutes, flipping halfway through, until golden and crispy.

          Cook the Steak:

            - While the fries are baking, heat 2 tablespoons of olive oil in a skillet over medium-high heat.

              - Season the flank steak with salt and pepper. Add to the skillet and cook for 2-3 minutes on each side until browned but still tender. Remove from the skillet and set aside.

                Sauté Vegetables:

                  - In the same skillet, add the sliced onion and green bell pepper. Sauté for 5-7 minutes until softened and caramelized.

                    Combine:

                      - Return the cooked steak to the skillet and mix with the sautéed onions and peppers. Cook for an additional minute to combine flavors.

                        Assemble:

                          - Once the fries are done, remove them from the oven and top with the steak and vegetable mixture.

                            - Sprinkle the shredded provolone cheese generously over the top. Return to the oven for an additional 3-5 minutes, or until the cheese is melted and bubbly.

                              Serve:

                                - Remove the cheesy fries from the oven, garnish with fresh parsley, and serve immediately!
