2 cups all-purpose flour

1 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup plain yogurt

3 large eggs

1/2 cup vegetable oil

1 teaspoon vanilla extract

Zest of 1 lemon

Instructions

Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper.

In a medium bowl, combine the all-purpose flour, baking powder, baking soda, and salt. Whisk until evenly mixed.

In another large bowl, beat the eggs and sugar together until the mixture becomes light and fluffy.

Add the plain yogurt, vegetable oil, vanilla extract, and lemon zest to the egg mixture. Mix until well combined.

Gradually add the dry flour mixture to the wet ingredients, stirring gently until just combined. Be careful not to overmix.

Fold in the chopped pistachios, ensuring they are evenly distributed throughout the batter.

Pour the batter into the prepared loaf pan and smooth the top with a spatula.

Bake in the preheated oven for 50-60 minutes or until a toothpick inserted into the center comes out clean.

Once baked, remove the bread from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.
