1 package (12 oz) frozen potstickers

4 cups low-sodium vegetable broth

2 cups water

1 tablespoon sesame oil

3 cloves garlic, minced

1-inch piece fresh ginger, grated

8 oz mushrooms, sliced (shiitake or cremini recommended)

2 cups bok choy, chopped

2 green onions, sliced for garnish

1 tablespoon soy sauce

1 tablespoon rice vinegar

Salt and pepper, to taste

Fresh cilantro, for garnish (optional)

Sauté Aromatics: In a large pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, stirring until fragrant (about 1 minute).

    Cook Mushrooms: Add the sliced mushrooms to the pot and cook for 4-5 minutes until they are tender and begin to brown.

      Add Liquids: Pour in the vegetable broth and water. Bring the mixture to a gentle boil.

        Prepare Bok Choy: Once boiling, reduce the heat to medium-low, and add the chopped bok choy. Let it simmer for about 3 minutes until the bok choy is wilted and tender.

          Incorporate Potstickers: Carefully add the frozen potstickers to the pot. Allow them to cook for 5-7 minutes, or until they are heated through and floating to the surface.

            Season the Soup: Stir in the soy sauce, rice vinegar, salt, and pepper to taste. Adjust the seasoning as needed based on your preference.
