For the Pretzel Bites:

1 cup warm water (110°F to 115°F)

2 tablespoons granulated sugar

2 teaspoons active dry yeast

4 cups all-purpose flour

1 teaspoon salt

½ cup baking soda (for boiling)

1 egg (for egg wash)

Coarse sea salt (for sprinkling)

For the Cheddar Sauce:

1 cup sharp cheddar cheese, shredded

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

1 cup milk

1 teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

Optional: pinch of cayenne pepper for heat

Instructions
 

Prepare the dough:

    - In a large mixing bowl, combine warm water, granulated sugar, and active dry yeast. Stir gently and let it sit for about 5 minutes until it froths.

      - Add flour and salt to the yeast mixture. Mix until the dough comes together, then knead on a floured surface for about 5-7 minutes until smooth and elastic.

        Let it rise:

          - Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour, or until doubled in size.

            Shape the pretzel bites:

              - Preheat your oven to 425°F (220°C).

                - Once risen, punch down the dough and divide it into small pieces (about 1-inch). Roll each piece into a small ball.

                  Boil the bites:

                    - In a large pot, bring about 10 cups of water to a boil. Add the baking soda.

                      - Carefully drop in the pretzel balls in batches, boiling them for about 30 seconds. Remove with a slotted spoon and place on a lined baking sheet.

                        Prepare for baking:

                          - Whisk the egg in a small bowl and brush the egg wash over each pretzel bite. Sprinkle them with coarse sea salt.

                            Bake:

                              - Bake in the preheated oven for 12-15 minutes or until golden brown. Remove and let cool slightly.

                                Make the cheddar sauce:

                                  - In a saucepan over medium heat, melt the butter. Add the flour, stirring constantly for about 2 minutes.

                                    - Gradually whisk in the milk and cook until the mixture thickens.

                                      - Stir in the shredded cheddar cheese, garlic powder, onion powder, salt, pepper, and cayenne (if using) until smooth.

                                        Serve:

                                          - Serve the warm pretzel bites with the hot cheddar sauce for dipping.
